3 cups half-and-half
1/2 cup grated Parmesan cheese
1/2 cup minced green onion
2 cups freshly cooked crabmeat
1 pound fettuccine, freshly cooked and drained
2 tablespoons unsalted butter (optional)
2 small fresh or frozen artichokes, trimmed, steamed and quartered
Salt and freshly ground black pepper, to taste
Recipe Instructions
1. In a saucepan over moderately high heat, simmer half-and-half until reduced by half. Add half of the Parmesan, the green onion and crabmeat. Stir until sauce is heated through.
2. If desired, toss freshly cooked pasta with the 2 tablespoons butter.
3. Pour sauce over cooked pasta; toss. Arrange artichokes over pasta. Sprinkle remaining Parmesan on top. Season with salt and pepper; serve immediately.
Serves 4.
